Chef Ava’s Story: Inspiring Others to Eat Healthy

Over 38 million people in the United States have diabetes, according to a 2024 report from the U.S. Centers for Disease Control and Prevention (CDC). Even more people in the United States—at least 97 million—are believed to have prediabetes. Simply put, diabetes is becoming an epidemic that requires everyone’s attention.

Combatting diabetes is a key focus for our team at Rainbow Chefs Academy, which is why we offer hands-on culinary experiences that encourage healthy habits. In addition, our YouTube channel features dozens of free, student-led videos that teach kids how to prepare nutritious recipes.

For one of our YouTube chefs, Ava Mendoza, the fight against diabetes is very personal. According to Mendoza, her family “has Type 2 diabetes running through their veins.” Genetics certainly plays a role in getting diabetes, but so does lifestyle. Now in college at the University of Southern California, Chef Ava continues to inspire others to eat healthy—and, in turn, is working to offset diabetes in her community.

From Rainbow Chef to Nutrition Advocate at USC

Chef Ava’s recipe preparation videos on our YouTube channel have been viewed thousands of times. From chicken pita pockets to vegetarian tortillas and tiramisu, her friendly approach resonates with viewers across the globe.

Given Chef Ava’s enthusiasm for healthy cooking, it’s no surprise that she’s majoring in health and human sciences with a minor in nutrition and health promotion. And, she’s not just learning—she’s taking action, too. “I also am a student nutrition worker at the USC athletic department,” Mendoza says. “So, I’m constantly around nutrition and inspiring others to eat healthier and make better choices when it comes to food.”
